Ingredients:
- 2 packets (1.15 oz each) Trail Butter (any flavor—Maple Syrup & Sea Salt, Dark Chocolate & Coffee, etc.)
- 2 ripe bananas, mashed
- 2 large eggs
- 1/4 cup honey or maple syrup (optional)
- 1/2 cup rolled oats
- 1/4 cup chia seeds or ground flaxseeds
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup almond milk (or any milk of choice)
- Optional: nuts, dried fruits, or dark chocolate chips
Instructions:
-
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
-
Mix the wet ingredients: In a large bowl, combine the mashed bananas, eggs, Trail Butter packets, honey or maple syrup (if using), almond milk, and vanilla extract. Stir until everything is well combined.
-
Mix the dry ingredients: In a separate bowl, combine the oats, chia seeds (or flaxseeds), baking powder, baking soda, cinnamon, and salt.
-
Combine wet and dry: Slowly add the dry ingredients to the wet mixture and stir until fully combined. If you're adding any optional mix-ins like nuts, dried fruits, or chocolate chips, fold them in now.
-
Fill the muffin tin: Scoop the batter into the muffin cups, filling them about 3/4 full.
-
Bake: Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
-
Cool: Let the muffins cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
Enjoy!
